It takes 10 gallons of maple sap to make 1 quart of maple syrup. Sr. Grace has collected approximately 150 gallons of sap this season. So we can look forward to 15 quarts of the yummy syrup! Yesterday she collected the last of the sap, removed the spiles and buckets and cooked down the sap. It takes hours to cook it down and she uses a candy cooker for the process. It's ideal, really with its large kettle and exhaust fan.
